Baked Eggplant




Ingredients



  1. 1 lb eggplant
  2. 1 oz butter
  3. Salt and pepper to taste
  4. 1 small chopped onion
  5. Bread crumbs
  6. 1 tbsp tomato ketchup

Preparation



  1. Boil eggplant in skin until tender.
  2. Skin, then crush to a pulp with butter, salt, pepper, onions, and ketchup.
  3. Sprinkle with bread crumbs.
  4. Bake in a moderate oven until brown.
